Acacia honey actually comes from the black locust tree (Robinia pseudoacacia), a native of eastern and southeastern North America.
Acacia honey is light-colored or even clear, with a sweet and delicate or mild taste containing hints of vanilla or a flower-like aroma. Its delicate flavor allows it to pair well with cheese. Acacia honey remains liquid longer and crystallizes much slower than traditional honey.
Acacia honey has been used for its antiseptic, healing and antimicrobial properties. Acacia honey has low pollen content, and contains natural antioxidants.
